Flavour and use
Thanks to the fully washed processing, this coffee offers excellent clarity and a delicate structure. The flavour reveals notes of dried apricots, elderflower florality, and the juicy freshness of lime. The coffee is very elegant and delicate.
About the region and processing
This coffee comes from the Gitoki washing station, located in the eastern part of the country in the Gatsibo District, Gitoki Sector, in Rwanda’s Eastern Province. Coffee trees grow here at altitudes of 1,500–1,800 m a.s.l., which, together with the local climate, creates ideal conditions for slow cherry ripening and the development of complex flavours. The coffee is processed using the fully washed method. Cherries are handpicked by farmers, carefully sorted on sorting tables, and then floated in water to remove lighter and defective cherries. After weighing and recording for full traceability, the coffee undergoes pulping and fermentation. First, a dry fermentation takes place for 12 hours, followed by partial washing (so-called dancing floats), after which the coffee is soaked in water for 24 hours. This careful process contributes to a clean, balanced, and elegant flavour profile.
