About the Region
This superb, juicy coffee comes from a community of smallholder farmers in the Kirinyaga region, an area of fertile volcanic soil located on the slopes of Mount Kenya. The Ngugu-ini Factory washing station was established back in 1958 and today is part of the Kibirigwi Cooperative Society, which brings together more than 1,200 members and supports over 7,000 farming households. The name “AA” refers to the largest bean size grade, typically associated with the full flavor potential. In general, the larger the bean, the better the cup quality.
Processing
This coffee was processed using the traditional fully washed method, typical for Kenya. First, perfectly ripe cherries are carefully selected and pulped. During pulping, some of the fruit mucilage remains on the beans. The beans are then placed in concrete fermentation tanks, where the mucilage breaks down. After fermentation, the beans are washed in long concrete channels – hence the name “washed process.” Finally, the beans are spread on raised African beds to dry for approximately 18 days. During drying, the beans are regularly turned to ensure even drying and consistent quality.
