Colombia Villa Fátima comes from the Colombian region of Huila, considered one of the best areas for specialty coffee production in the country. Thanks to high altitudes, fertile volcanic soils, and a stable climate, coffees from this region are known for their pronounced sweetness, clarity, and complex flavor profiles. The Caturra variety, a natural mutation of Bourbon, is popular among local farmers for its balance and elegant cup character.

In the cup, this coffee offers juicy notes of orange and cranberries, complemented by a sweet, warming finish reminiscent of maple syrup. The profile is well balanced, with pleasant acidity and a round body. 

About growing

The village of Villa Fátima lies in the Huila region, where most of the production comes from smallholder farmers working on small family plots. Coffee trees grow at altitudes often exceeding 1,500 meters, in the shade of native trees and on nutrient-rich soils. Harvesting is done by hand, with farmers selecting only perfectly ripe cherries to ensure the highest quality.

After harvest, the coffee undergoes washed processing, which is typical for Colombia. The cherries are first depulped, then fermented in water tanks where the remaining mucilage is broken down. The beans are then washed with clean water and dried on patios or raised beds until they reach the ideal moisture content. This processing method highlights the coffee’s clarity, bright acidity, and natural sweetness.

The Huila region has become synonymous with high-quality Colombian coffee. Thanks to the combination of ideal climate, traditional farming practices, and careful manual work, coffees from this area consistently rank among the best in the world.
