Coffee from Finca Monteblanco is the result of a long-standing family tradition and the innovative research of Rodrigo Sanchez Valencia, a third-generation coffee farmer in Colombia’s Huila region. Thanks to his advanced fermentation techniques, his coffees are consistently recognized among top specialty lots.
Flavor profile & use
This Pink Bourbon lot offers a remarkably clean and complex cup with pronounced floral and fruity notes. Controlled low-temperature fermentation enhances its juicy character, elegant acidity, and long, harmonious finish.
About coffee cultivation
Finca Monteblanco is a family-owned farm located in Colombia’s Huila region, with a strong focus on biodiversity and quality. Since 2016, Rodrigo Sanchez has been experimenting with controlled fermentation inspired by winemaking techniques. Ripe cherries are selectively handpicked at 26–30 °Brix, carefully sorted, and fermented in sealed GrainPro bags at 10–14 °C for 76 hours. The Pink Bourbon variety, now understood to be genetically closer to Ethiopian landrace varieties than to traditional Bourbon, is prized for its exceptional cup potential and good disease resistance. Coffees from Monteblanco have repeatedly placed at the top of international quality competitions.
