Colombia Coocentral comes from the Huila region of Colombia, widely regarded as one of the most important areas for specialty coffee production in the country. Thanks to high altitudes, fertile volcanic soils, and a stable climate, coffees from this region develop pronounced sweetness, a clean cup profile, and a complex flavor character. Farmers organized in the Coocentral cooperative focus on careful hand-picking and precise processing, ensuring consistent and elegant cup quality.

In the cup, this coffee presents bright notes of citrus and ripe fruit, complemented by a delicate sweetness reminiscent of dried fruit. The profile is well-balanced, with a pleasant juicy acidity and a smooth, medium body.
About the region, farm, and processing
Coocentral coffee is produced by smallholder farmers organized in the Coocentral cooperative, who cultivate their coffee on small family farms in the Huila region. Coffee plants grow at high altitudes, often exceeding 1,500 meters above sea level, in conditions ideal for slow cherry maturation, which enhances flavor complexity. Harvesting is done entirely by hand, selecting only fully ripe coffee cherries. After harvest, the coffee undergoes a washed processing method, typical for this region. The cherries are depulped, fermented in water tanks, carefully washed, and then dried on patios or raised beds. This process highlights clarity, bright acidity, and the coffee’s natural sweetness. The Huila region is widely recognized as one of Colombia’s premier coffee-growing areas. The combination of ideal climate conditions, traditional farming practices, and strong cooperative structures such as Coocentral consistently produces coffees ranked among the finest specialty coffees in the world.
