Origin
In the Tarrazú region, a unique microclimate can be found: the proximity of both the Irazú volcano and the ocean. During the fertile season, weeds are removed by hand, and no pesticides or fertilizers are used. The result is naturally sweet and juicy coffee cherries, harvested and sorted manually. An interesting fact is that a small percentage (0–10%) of mucilage is intentionally left on the beans, which naturally supports fermentation. The “yeast washed” process is a yeast-fermented method. It is a natural fermentation supported by microorganisms found on the surface and around the seed of the cherries. It is a carefully controlled process where proper timing is essential.
