Origin
The Pampojilá farm is located in the Atitlán region and has a rich history rooted in tradition and dedication to coffee cultivation. It was founded several decades ago and has since been managed by multiple generations of farmers devoted to perfecting their craft. The farm is known not only for its long-standing heritage but also for its emphasis on sustainable agriculture and the preservation of traditional practices that ensure consistent coffee quality. This lot was processed using the washed method, which is very typical for this region and helps highlight clean and balanced flavors. During the harvest, the coffee cherries are hand-picked to ensure only the ripest fruits are selected. They are immediately depulped and thoroughly washed to remove all mucilage. This is followed by drying on prepared beds for 10–20 days.
