Behind this coffee stands the now legendary farmer Hendra, who processes some of the finest coffees at the Gayo Avatara farm in the very heart of Sumatra, using both classic and alternative processing methods. He continuously refines his many years of experience, culminating in a remarkable 4th place finish at the prestigious Cup of Excellence in 2023. This lot was processed using carbonic maceration, in which whole coffee cherries are fermented in sealed containers in an environment rich in CO₂. This process gives the coffee exceptional juiciness and a subtle alcoholic note.
