Origin
Juanachute is the name of the farm and processing mill owned by Luis Anastacio Castro (or “Tacho,” as he is called by friends and family). Juana and Chute were the nicknames of Tacho’s great-great-grandparents, whom newer generations still remember fondly and who also became the inspiration for naming this micro mill. At Juanachute, they have extensive knowledge of various processing methods and have also been able to determine the ideal process for each of their farms and individual plots. Juanachute began processing coffee cherries in 2012, an idea introduced by Tacho’s eldest son, “Tachillo.” The operation processes approximately 300 bags of coffee annually from their various farms. Tacho and his sons greatly enjoy experimenting and testing different processing methods on their farms in order to determine the most suitable one in each case.
