Origin
Banko Gotiti is a small town in the south of Gedeo County, in the Kochere area of Yirgachefe. The local washing station processes coffee cherries from nearby smallholder farmers who cultivate coffee on single-hectare plots. This traditional model of coffee cultivation and processing remains deeply rooted in the region. The reddish-brown soil in this area is highly fertile and rich in nutrients. In combination with the altitude of the farms, this significantly contributes to the unique aromatic profile of this coffee. After careful selection of the cherries, fermentation takes place in an anaerobic environment, under pressure and without access to oxygen. Fermentation lasts 7 to 10 days at a temperature of 15–18 °C. During this time, station employees monitor sugar levels to ensure the best possible results. The coffee is then transferred to the station’s drying beds, where it rests in the shade for 15 to 20 days. The cherries are regularly stirred to ensure good air circulation and prevent over-fermentation. When the coffee reaches 11% humidity, it is ready for export.
