Origin
The coffee comes from the Peñas Blancas Coffee Processing Center in Acevedo, located in the Huila region. This facility is not only a processing center — it also serves as an important social project focused on improving conditions for local growers. Small-scale farmers gain access to modern technologies, expert support, and fair purchasing practices. Centralized, professionally managed processing allows them to achieve higher prices and more stable income, positively influencing their everyday lives. The Peñas Blancas project represents a model of sustainable and transparent coffee production in the area. This coffee was processed by Nestor Lasso and Jhon Vergara, two progressive producers dedicated to refining post-harvest techniques in Acevedo. Nestor Lasso, known for his experiments and innovations in processing, complements the experience of Jhon Vergara, who has long focused on farm management and post-harvest workflows. The coffee was prepared using the natural (dry) method, during which whole cherries are dried without intervention. This approach allows the fruity notes to fully express themselves in the final beans, giving the coffee both clarity and complexity.
